I'm installing a new door and need some advice on the best way to cut the recessed pocket for the doorknob and deadbolt so that the plate sits flush against the door. Any tools or methods you'd recommend?

For a bigger project with several doors, a router is the way to go. It speeds things up and makes for a more uniform cut across all your doors.
If you're just doing one door, I’d recommend using a chisel. It's straightforward and gives you good control. Just make sure to practice on a scrap piece first to get your technique down!

And don't forget to ensure your chisel is sharp for cleaner cuts!
