I'm crafting a live edge table using maple, and while I managed to remove the bark pretty easily, the phloem beneath is proving to be a challenge. I've been using a flat head screwdriver, but it's stuck on really well, and given that the table is over 10 feet long, it's turning into a lengthy process. I really want to preserve the wood's natural bumps and imperfections, so sanding is out of the question. Does anyone have tips or techniques to make this task easier? Thanks!

A pull-type paint scraper might just do the trick! It’s worked wonders for me in similar situations. Give that a shot!
Have you considered using a steel brush? It really helps in getting that phloem off without damaging the wood.
