I'm taking out my old laminate flooring in the kitchen because I'm set to install Luxury Vinyl Tile (LVT) next week. I'm wondering if I should also remove the laminate that's under my kitchen island. If I do, how will the LVT be laid down? Or will it look weird if I just put the LVT around the island?

It really depends on how your kitchen island is set up. If it’s not anchored to the floor, you should be able to take out the laminate under it pretty easily. If you can, sharing a picture of the area could help others give you more tailored advice!
You might have to take out the whole island, especially if it was installed over the laminate. If that's too much hassle, consider just installing the LVT up to the base of the island and then using some shoe or quarter round trim to blend it in with the rest of the floor. That way, it’ll look nice without major alterations!
I think the island was put in after the laminate. We’re putting down the LVT next week, and I really don’t want it to look odd with gaps or anything.
