Need Tips for Making Homemade Pizza Sauce

Hi everyone! I'm on the hunt for a delicious homemade pizza sauce recipe. I've got a bunch of fresh tomatoes from my garden—Roma, cherry, and yellow pear—along with sweet Texas onions, green bell peppers, garlic, and loads of herbs. However, I've never made pizza sauce from scratch before! I'm excited to try it out and am open to any and all flavor suggestions you might have.

If you're aiming for a fresh pizza sauce vibe, I use one pint of home-canned tomatoes along with a couple of garlic cloves, a tablespoon of oregano, a splash of red wine vinegar, and a bit of anchovy paste for depth. I puree this in a food processor and strain it until it reaches the right consistency. Oh, and if you’re feeling adventurous, try adding vodka to the seasoned water for a fun pizza shot!

I have a tried-and-true method without strict measurements. I like to dice and freeze the tomatoes first—it helps reduce cooking time! When I make sauce, I run the tomatoes through a food mill to get rid of the seeds and skin. I usually start with finely diced onion and green pepper, sautéing them if I want a softer texture. Then, I toss in garlic, red pepper flakes, oregano, and if it gets too bitter, a bit of honey. Cook everything on low heat, stirring often. I just use whatever tomatoes I have on hand, and if I need more for a batch, I freeze until I do! If you're canning the sauce, be sure to follow an approved recipe though.
