I'm wondering if I could tackle this myself instead by wearing some protective gear, removing the moldy panels, spraying an effective solution, and using a couple of $250 dehumidifiers. How much work is really involved here? Are these professional prices justified due to the risks associated with mold, or can I save some money and do it myself?

It's definitely possible they're making a profit from your mold anxiety. You can clean up and dry out things on your own. Just ensure you’re really addressing the moisture problem first—household dehumidifiers should be enough for that.
