I just moved into a new home and noticed that it has quarter round installed along the baseboards. I'm curious if I should caulk it to the floor or if I should consider removing the quarter round altogether since my flooring is laminate wood. What do you all think?

Ripping it out might reveal surprises you don’t want to deal with. Floating floors need a quarter-inch gap for expansion, remember? So leaving it there while caulking the top edge against the baseboard is your best bet.
You really don’t need to caulk the quarter round to the floor. It should be installed snugly against the floor to cover any gaps between the laminate and the wall. Removing it is probably unnecessary and may just cause more issues.
Yeah, I agree. It's better to leave it as is and just make sure it's flush with the ground.
Definitely don’t caulk it! Laminate floors are designed to float, allowing for expansion and contraction. If you caulk it, you might mess with that and run into some problems down the line. Just keep the quarter round as it is.
