I'm currently putting in luxury vinyl plank (LVP) flooring in my kitchen, but I'm unsure about how to finish the edges under my appliances. I'm planning to use baseboards or end-caps in most of the area, but there's no room for them where my fridge and oven sit. Is it okay to just leave those areas unfinished, or could that cause the flooring to shift or lift over time?

I'd say you don't have to worry too much about the flooring shifting unless your home has wild temperature changes. I put LVP throughout my whole house, including the kitchen, and didn't have any baseboards behind my fridge or oven for five years without any issues. Just make sure your subfloor is prepped well and that there's a gap at the edges - that's what really counts!
If you're really concerned, a good option under your range and dishwasher is to apply silicone caulk where the flooring meets the cabinets. It creates a seal while still allowing for some movement.
I considered that too; I heard it can be a solid solution!
