I'm planning to replace my current 30" alcove tub with a larger 32" one and I'm a bit unsure about the plumbing aspects. Given that the new tub will be placed just an inch over, what additional items will the plumber require for the installation? Also, is my existing subfloor, which is in good condition, suitable for the new tub installation or should I consider getting a new one?

As long as your subfloor is solid and not moldy or damaged, it should be fine to use. Just ensure the plumbing tweaks are done correctly to accommodate the new tub’s dimensions. It’s always good practice to double-check everything before setting the new tub in place!
You'll definitely need a new waste and overflow kit since the fitting might not line up perfectly with the old one. Even if the old setup seems fine, this part typically needs to be replaced especially if it was glued in. Better to be safe than sorry! Plus, check the clearance around the tub if there's anything nearby like a toilet, but sounds like yours is in a separate space.
