Best Clear Finishes for Indoor Fir Cabinetry?

I'm working on a DIY project with my 1940s kitchen sink cabinetry made from clear vertical grain Douglas fir. After stripping the old paint, I'm looking for advice on the best clear finish to protect the wood without staining it. Since the cabinetry is built-in, I need to apply the finish inside my home. I'm considering options like a water-based finish or low-VOC Waterlox but would love some recommendations from others who have experience with similar projects. Thanks for any guidance!

I wouldn't recommend using a water-based film finish for this. Given that it's in a kitchen, a penetrating oil would be better. Water can seep in around the sink, and water-based poly could cause issues down the line.

I recommend using a water-borne polyurethane. I've had excellent results with finishes meant for flooring. If you can mask and spray it on, that's ideal! But brushing it on with some sanding in between coats works really well too, plus it dries quickly and has minimal odor.

Tru Oil is a great option! It's a polymerized linseed oil finish, usually for gunstocks, but it looks amazing on wood without that plastic look. Just apply a few coats with a rag or brush, sand lightly in between, and it builds up quickly since it dries fast.
