I'm trying to choose between Waterlox and Rubio Monocoat for finishing my Sapele wooden countertop. I won't be using it as a butcher block, so I'm looking for some insights or experiences with these finishes before making a final decision. Any advice would be greatly appreciated!

I used Waterlox for a countertop in a student rental and I was shocked at how well it has held up! I installed it six years ago as a temporary fix, and even though there are scratches from not using cutting boards, it looks fantastic with no water damage from spills. I wholeheartedly recommend it if you're looking for durability!
