I recently stored some acorns in the fridge, lightly watered them, and covered them with a paper towel. Do I need to keep adding water to keep them moist until I'm ready to take them out for planting?

It really depends on what you're planning to do with them! If you're looking to grow trees, a common method is to freeze them to mimic winter conditions. After about a month, you can thaw them out and do a float test to see which ones are still good—good seeds will sink and the bad ones will float. Once you've sorted them, you can plant them in a pot or directly in the ground.
Freezing might not always be a good idea since it can damage the seed. It seems like you’re already doing a float test, which is great! Just keep an eye on moisture levels—keeping them slightly damp, but not soggy, is key. If you notice a few have floated, it could mean they're not viable, but if you've got some good ones, you should be all set to plant!
