Should I Choose MDO or MDF for My Assembly Table Top?

I'm building an assembly table in an uninsulated barn that gets quite cold in winter. I've heard MDO is better for fluctuating temperatures and humidity, but it costs more than MDF. Is it worth paying extra for MDO to avoid warping, or can I use MDF and still have a relatively flat tabletop? I'm considering using two sheets of either 3/4" MDO or MDF. Additionally, I might install a wood stove in the barn later on.

If you're dealing with changing temperatures and humidity, MDO is definitely the better bet. It's designed for outdoor use, so it should handle those shifts without warping like MDF tends to do. Unless you're okay with potentially having to replace an MDF top every couple of seasons, I say go for the MDO!

I've actually made a bench top from laminated MDF in my uninsulated garage, and it's holding up pretty well. I sealed it with shellac and added poplar edging. I don’t think MDF is as fragile as people say, but you will deal with a lot of dust, which is a downside to consider.

Have you thought about using birch plywood with a laminate top? You can get a laminate from places like Home Depot, which saves on shipping. It's pricier, but I think it's a great option for durability. Just put a frame around the edges for extra strength. I managed to laminate a top myself, and it wasn't as hard as you'd think!

I actually have a Woodcraft nearby! I was leaning towards MDO to throw some hardboard or Formica on top. But I’ve been searching everywhere for Formica without a plywood backer and it's tough to find.
