I've got a ton of Thai chilies from my garden this year, and they turned out to be super prolific! I'm wondering if anyone has cool recipes or preservation methods for them. I'm thinking of freezing them, but I'd love to hear any other creative ideas or techniques you all have tried, maybe for winter or for the next growing season!

You should definitely try making homemade Sambal Olek! It’s super easy and brings a lot of flavor. Some people also call it chili garlic sauce. Perfect way to use up those chilies!
I dry my peppers using a dehydrator and then grind them up with a coffee grinder. I mix the powder with uncooked rice to keep it moisture-free, and then I store it in a salt shaker. It’s a great way to have hot chili powder ready to spice up any dish! Hot sauce is another option, but I prefer this method since I can use it longer without it going bad.
