I messed up the finish on my desktop a few years back because I didn't let the oil-based stain dry properly before applying the water-based poly, and now it's still a bit soft and gummy after almost 4 years. I want to refinish the desk but want to avoid any plastic finishes due to my preference for natural options. I've heard tung oil is good, but it needs yearly reapplication, which I'd like to avoid. Are there other oil finishes that require less frequent maintenance?

You might want to check out Osmo Polyx. I've found it to be an excellent finish, and it really holds up well without the plastic feel.
What type of wood is your desk? The species can sometimes influence the choice of finish!
It's a hevea butcher block countertop on a standing desk frame.
Rubio Monocoat is another great option! It's super easy to apply and you realistically can't mess it up. The only downside might be the price, but it could be worth it for the ease of use.
