From my experience, bigger seeds are usually easier to start, especially if you're planning on transplanting. So, I'd recommend trying beans or zucchini! They tend to sprout well and are pretty forgiving if your toddler gets a bit enthusiastic. Also, have you ever tried using the leaves and flowers of nasturtiums in salads? They add a nice peppery flavor!
