I recently got my hands on a fresh horseradish root that's about 25 cm (10 inches) long. I'm really excited to plant it, but I'm feeling a bit impatient. Is it possible for me to cut a piece off and still successfully grow the rest?

Absolutely, you can cut off a chunk of horseradish and still plant the rest. Just keep in mind that horseradish can be invasive, so it's probably a good idea to plant it in a pot or contained space to manage its growth.
Definitely! My dad used to cut the root and leave about 2 inches with some leaves for replanting. This plant is pretty hard to kill. Just so you know, it prefers moist soil, like what you find along riverbanks.
