I'm a newbie gardener and recently moved into a house that seems to have a previous owner who loved ornamental grass way too much. I thought I'd tackle it myself by cutting the grass, tilling the soil, and pickaxing out the roots. But the roots are relentless! I keep finding more roots as deep as, well, Moria, and it's super frustrating since I can hardly clear any space at all. I've read that I could use Roundup on the grass, but it's all just roots now. Do I have to wait until Spring for the grass to reappear before I can kill it, or is there something I could plant in the meantime?

First, you need to identify the type of ornamental grass you have. I have several kinds, and some are easier to remove than others. Typically, the main issue is usually self-seeding rather than roots.
You might want to consider just removing all the dirt with the roots and starting fresh with some good soil. I would be cautious about using Roundup, especially since it's near a high-traffic area. Wouldn't recommend that if you're going to be around it often!
Honestly, you may need a backhoe to help remove them. Getting rid of those types of grass by hand can be super tough! It's really a lot of work for any beginner.
