I'm looking for suggestions on edible plants that can thrive in hot climates and be grown in containers. Any recommendations would be greatly appreciated!

Consider growing perpetual spinach, also known as perpetual chard! It's super heat tolerant and can handle a bit of cold, too. I had a fantastic experience with it during the scorching summer of 2023, where temps were soaring between 100-110°F. The best part? It grows well in containers instead of getting massive in the ground. Its leaves can be used like spinach or cabbage in recipes, and the stalks taste better than celery! Plus, garlic chives grow well even in the shade!
If you're in a place like Mexico where it rarely freezes, you've got some great options! In my own experience growing in SoCal, I’ve had success with dwarf Indian eggplants, ichiban eggplants, mini bell peppers, water spinach, and even sweet potatoes. Perennial collard greens are worth trying, too, though I ended up removing mine eventually. Also, green onions can be fun since there's a variety that keeps multiplying indefinitely! Don’t forget about chives and Thai basil—they're both perennials. Hope this helps!
