I'm trying to find some ideas on how to securely latch an interior barn door so that it's safe for babies, but still allows adults to easily open it from either side. Any tips or tricks?

You might want to go with a double-sided gate latch. If you're looking for added security, you can also consider putting a baby gate in the doorframe itself, that way you have both options covered.
One option is to install a basic gate latch, but make sure to position it high enough that little ones can't reach it. You could drill a small hole through the door and attach a pull cord on the outside, so adults can easily pull it from either side.
