Hey everyone! I'm a first-time gardener and I'm about to harvest some sweet potatoes soon. I've come across some discussions online about a curing period, but I'm not really sure what that entails. Can I use the sweet potatoes right after I dig them up? If not, how long do they need to sit out before they're ready?

Yes, definitely let them cure! Right after harvesting, the skin is pretty delicate, and curing lets it thicken while any wounds heal. I usually let mine cure for about 10 days to 2 weeks. But if you’re eager, you can try one right away; just know it'll be starchier and not as flavorful.
From what I know, curing helps convert starches to sugars, which makes them taste sweeter. I grew sweet potatoes last year, and after the curing process, they turned out really well!
You can technically eat them right away, but they won’t taste as good—more starchy and drier. It’s best to wait around 2 weeks in a warm, humid environment. I just toss them in a tied grocery bag in my garage, and it works great!
