How Much Marinara Sauce Can I Expect from My Tomatoes?

I'm super excited because my tomatoes have finally produced a good yield, and I'm ready to make some marinara sauce! Can anyone give me an idea of how much sauce I can expect to make per pound of tomatoes?

It totally depends on the type of tomatoes and how much you cook them down. With some meaty beefsteak tomatoes, I used 20 pounds and ended up with 4 quarts and 2 pints of sauce. Just make sure to prep them well!

Exactly! Also, typically, you should core and skin the tomatoes before cooking, which affects the yield. If you start with 3 pounds, you may end up with around a pint after boiling down.

My last batch was from 30 pounds of tomatoes, which reduced down to about 6 quarts of sauce. So it really depends on how you cook them down!

When I made marinara using San Marzano tomatoes, which are perfect for sauce, I got about 1 pint for every 3 pounds of tomatoes. Just keep in mind that slicing tomatoes will yield even less because they cook down more!
