Should I wait for the soil to dry out again before I dig them up, or is it better to pull them now to avoid any risk of rot since it's been wet? If the leaves on your potatoes have dried up fully, it's best to wait until the soil dries a bit more before harvesting. Wet soil can be sticky and makes digging more difficult. Since you've only had three days of rain and the soil is starting to dry out, there’s likely no real risk of rot right now.
Honestly, I just leave my potatoes in the ground until freezing temperatures really start to set in. They can usually handle being in there a bit longer.
