I'm really excited about having a decent garden this year since it's my first time, and I'm looking to plant some crops for the fall and winter. Can anyone suggest what works best in Zone 7B?

You might want to check out Millennial Gardener on YouTube. He just posted a fall planting video and he's close to your zone, although he’s in 8B in North Carolina. It's a great resource!
It really depends on what you like to eat. Common fall crops for your zone include carrots, beets, brassicas, peas, radishes, arugula, and lettuce. You can grow any of those in 7B. Just think about your available space and your personal favorites!
You should check out Southern Exposure Seed Exchange; they have excellent seed varieties that are great for southern climates. I'm in 7A in Virginia, and I’ve always had great fall and winter success with brassicas, carrots, radishes, and lettuce (especially if you use a cold frame).

I’m in 7A, and I think you can plant a lot of things in 7B too. Gary Pilarchek and James Prigioni are two YouTubers from Maryland and NJ that also have helpful content for our zones!
