Best Finishes for Butcher Block Countertops?

I'm swapping out my old composite countertops from the 90s for a new prefab butcher block top from Lowe's, and I'm stuck on what finish to use. Ideally, I want something food safe, but I'm open to other options if they have a significant advantage. I'm considering mineral oil (with or without beeswax), tung oil, linseed oil, or a water-based urethane. What do you all think?

I used Watco butcher block oil/sealant on mine. Claims to be food safe and 'permanent.' Just a few coats with light sanding in between, and it's been about 20 months with no need for recoating or oiling, which is great. Just make sure there’s no standing water for extended periods, especially since I have a drop-in sink.

If you're planning to chop directly on it, I'd say use mineral oil, but personally, I wouldn't recommend cutting directly on a countertop. That said, I wouldn't want to be re-oiling it every couple of months either. My go-to would be Waterlox Original, which combines resin and tung oil. It's super durable and seals the wood well, but just be ready for a strong smell until it fully cures!

Have you considered doing a bar top epoxy pour? It’s a fantastic way to protect your countertop thoroughly and keep it looking great!
