I'm working on a project where I need to seal gaps between metal and wood, but I'm struggling to find a suitable water-tight sealant. The caulks designed for metal don't adhere well to porous surfaces, and the ones for porous materials don't work for metal. What would be the best option for sealing these two materials together effectively?

You might want to try 100% silicone or AMP caulk. Just a heads up, make sure you finish your wood first, because once you apply that sealant, you won't be able to change the color or shine later!
Urethane sealants like Sikaflex or 3M 5200 are solid choices too. They're designed for tough conditions and stick well to both materials. Just remember, if you're using roof flashing sealant, it works because of the properties, not just the type of surface it’s intended for.
I'd recommend using epoxy for a strong bond. It's durable and works well between metal and wood. What kind of project are you putting together?
