I'm currently building a workbench for my garage using MDF for the top, but I'm not planning to paint it or anything flashy. I definitely want to seal the MDF though. I've heard some folks on YouTube talking about using water-based polyurethane, but my local Lowe's doesn't seem to have it in stock. I'm looking for recommendations on what would be the best sealer for MDF, or if there's something better out there. Any advice would be great. Thanks!

I actually have an MDF workbench without any finish, and it's been fine. The factory surface is pretty durable for light use, and honestly, anything you bring onto it is likely to create some wear anyway. If you've got leftover sealer, you could use that, but I wouldn't bother buying something new just for this bench unless you have a specific use in mind.
If you can’t find water-based poly, try using oil-based instead—it works just as well! A good starting point would be tung oil; it's a penetrating finish which strengthens the surface. Just remember, for the first coat, go heavy to let the MDF absorb it, especially on the edges. After a few coats and letting it cure for about a week, you can top it off with polyurethane for extra protection. That should do the trick!
I went with polycrylic on mine, applying several coats with some light sanding in between. If you’re using good quality MDF, you won't need as many layers, but I was working with some rough stuff, so I went the extra mile. It all depends on the condition of your MDF!
