I'm looking to plant some thorny or sticky shrubs along my property line and by the road to keep people away. I'm in growing zones 5-7. Any recommendations on what would work well?

There are plenty of thorny choices! Barberry is a solid option, along with climbing and shrub roses, pyracantha, and ornamental quince. For some variety, check out wild American plums or even a tree cholla cactus! Just keep in mind to avoid invasive species in your area.
Barberry has thorny branches and pretty fall foliage, but watch out for Japanese barberry—it can be incredibly invasive! Virginia or Carolina rose and Prunus Americana are also good picks if you're looking for a rose option.
If you want something with a historical touch, consider osage orange; it was used as a thorny hedge before barbed wire was invented. Also, American holly and native hawthorn could work nicely for your needs.
