I'm currently working on replacing the doors of my shed with plywood siding panels. While the doors are already installed, I realized that I need to trim about 1/32" to 1/16" from the edges so they'll fit better. Since the doors are quite heavy and awkward to handle, I'd prefer to make the adjustments while they're in place. I don't own a track saw, and I've found using a hand plane to be quite tough. I do have a belt sander and an oscillating multi-tool at my disposal. What do you think would be the most efficient method for trimming the edges? I'm considering using my multi-tool with a circular blade and clamping a 1"x3" as a guide.

Using a small router with a flush trim bit and a top bearing is your best bet. Just clamp a straight edge on the door as a guide. After that, you can clean up the areas the router misses with your belt sander and a rasp for a smooth finish.

I like this idea! I’ve only got a small section to trim down as well.
