I'm diving into making cutting boards and need some advice! What type of wood should I go for, or should I base my choice on appearance instead? Also, is vegetable oil a safe alternative to mineral oil for finishing?

I wouldn't use vegetable oil; it can go rancid, making your board not safe for food. Instead, go with food-grade mineral oil. For the wood, choose non-toxic, closed-grain options to ensure durability.
