I'm looking to install a mortise lock, similar to this one I've linked, but I prefer to use hollow interior doors instead of solid wood, as they tend to be less expensive. Can mortise locks be compatible with the typical hollow doors that are commonly available? Any insights would be appreciated!

I really wouldn't recommend installing a mortise lock on hollow doors. They're just not sturdy enough to hold up that type of lock. You're better off going with a standard cylindrical lockset instead, as they’re specifically designed for hollow door construction.
While I get the concerns, if you're set on using a mortise lock like the one you shared, it could work with the common hollow core doors sold at big box stores. Just ensure that the mortise isn't too thick, since standard hollow doors are 1-3/8" thick. Some older mortise sets might be thinner, which can fit better. But honestly, how easy this will be depends on your DIY skills. I’ve worked with mortise locks before and it can be a bit tricky without the right tools.
It really depends on how your hollow door is made. Generally, these doors have a solid perimeter with a thinner core, which might not be wide enough for the mortise. You'd need a solid core door for a mortise lock to fit securely and not compromise the door's structure.
