My issue is that I need the table to be 6ft x 6ft, which exceeds the size of standard plywood sheets. If I use several pieces of plywood for both the top and bottom, will the torsion box still function properly? Or does the design require continuous sheets? If a torsion box isn't feasible, what are some alternative methods to create a flat 6ft x 6ft table?

You might want to try gluing two sheets of plywood together with staggered seams for the top and bottom. This way, you'll increase the strength and stability without relying too much on your joinery skills. Those seams shouldn't be a big issue if done right! You got this!
Using multiple plywood pieces will definitely work! The critical part is the frame of the torsion box, so as long as that's solid, you're good to go!
Another option is to build two 3' x 6' torsion box sections and then bolt them together. This not only gives you the full surface you need, but makes it easier to move and store the table when you need to.
