I'm curious if covering a bathroom counter with veneer and sealing it with waterproof polyurethane would be a good solution. I've never worked with veneer before and would appreciate any tips or alternative methods. Thanks for your help!

Honestly, I'd advise against that. Bathroom environments can be pretty tough on surfaces due to all the moisture. Although waterproof poly adds a layer of protection, the veneer itself might not handle the humidity very well over time. Have you considered other materials that are more durable for a bathroom countertop?
