I'm planning to level out my sloped yard by building a 20ft retaining wall and filling it with 8 yards of gravel. Is this too much work for just two DIY enthusiasts, or is it doable? Also, how high should the wall be to avoid any issues?

It really depends on how high your wall is! Most places require a permit for walls over 3 feet tall. If it's around 2 feet high, you should be fine. I’ve done similar projects solo with the right blocks, but it did take me longer than expected. Just make sure you understand the materials you're using, especially for drainage.
Thanks for the tips! Mine will be about 24 inches high. I'm okay with working over multiple days to move gravel and fill it, just want to make sure I'm not biting off more than I can chew.
