I'm thinking about buying an M18 Fuel framing nailer as a DIYer for projects like framing walls and building a shed. I'm trying to decide if I should go for the 30-degree or the 21-degree model. I'm planning to use 8 and 16D nails, so what are the pros and cons of each option?

You might want to check your local big box store first. If they stock 30-degree nails, that’ll probably be your best bet. It’s always good to go with what you can easily find and replenish.
I’ve played around with both the 21 and 30-degree models. From my experience, I’d say the 30-degree is superior. Just watch out for those annoying plastic bits with the 21-degree nailer, I've gotten hit in the eye more than once when they fly off!
I own a 30-degree nailer and really like that it uses paper collated nails. There’s no plastic or metal debris flying around every time you shoot a nail, which is great! It also holds more nails in the magazine. Just keep in mind if your box of nails gets wet, the paper can disintegrate, ruining the nails. Also, check whether your local hardware store has both types of nails available.
Honestly, just grab what your local store has the most of when it comes to nails. The main difference is that 21-degree uses plastic to hold nails together while 30-degree uses paper. I have a 21-degree nailer and I enjoy it, but there's a little cleanup needed after because of the plastic bits.
A lot comes down to your local building codes and what's available where you live. Personally, I’ve only come across one 21-degree nailer in my area. If you Google it, you can find out what's required for your projects and what nails are readily stocked in stores near you.
