I'm curious if anyone can help me identify this plant I found. It has a stem that's really sticky and slimy when I break it, and the inside is tubular. However, it doesn't seem to have a hole running through the stem. Could this be Japanese knotweed or something else?

It's tough to tell without a photo, but you might be looking at Japanese knotweed if its leaves are alternate. If the stem is hollow, it could be something else like Himalayan balsam or even giant hogweed, which is definitely not good. You should look up those plants for comparison—good luck!
