We recently upgraded our kitchen island with new granite and were quoted for 1 1/4" thick material. The samples reflected that thickness as well. However, during installation, my wife noticed that the island top looks thinner and observed saw marks on the surface. Our previous countertops have a consistent 1 1/4" thickness without any saw marks, so I'm wondering if we've been sold a different product. The installed island granite measures only 1", and I'm curious about how the leathered finish might affect thickness. We have measurements from both the sample and the installed piece, and it seems there's a significant discrepancy. Could this be a case of bait and switch?

Leathering can indeed affect thickness, but I've never seen it reduce as much as you’re describing. Those saw marks are a concern too; the fabricator should have polished those out. Sounds like something went wrong in your install process here.
It looks like you might have received about 20% less granite than what you paid for. Have you reached out to the fabricator about this? They need to address this issue and clarify what's going on with your install.
It’s important to understand all the terms when dealing with granite. Can you specify which terms you’re confused about? There might be some nuances here that could help clarify your situation.
