I’m also a newbie at growing onions from seed, but I'm having fun with yellow sweet Spanish onions! Just keep them damp and they've been sprouting well. The trick is to keep things simple and have patience. I plan to grow mine alongside strawberries for a boost. They work pretty well together!
Don't sweat the onions! They're really not that hard to grow. If you're in the northern hemisphere, start your seeds soon. I've had great success with yellow and red onions, and they don’t take much care once they're in the ground. I even leave some in through winter for next year’s seeds! Just be sure to plant them at the right time and they should do fine.
