I'm looking for narrow double swing doors that feature a latch bolt instead of the typical "saloon swing" doors. These would be similar to what's often referred to as "French doors", but I'm thinking more about a narrower setup (around 28" and 22") rather than the wider standard typically seen. Ideally, each door panel would have a doorknob—one dead and one with a latch bolt—so they can stay securely closed. I'm also hoping for a proper hinge along the side trim, rather than just at the top and bottom. I've seen a lot of conversions from bifold doors to saloon doors, but I want something already pre-hung. Are carpenters likely to make these adjustments on-site, or can I find pre-hung versions somewhere?

It might help to specify the width of your opening. You could get some 'no mortise' hinges for installing the doors, which makes it easier. I did a similar project for an arched opening and had to modify hollow core doors. I suggest using a slide lock for added security and functionality.
It's important to check if your double doors will meet local building codes, especially if they're meant to be egress doors. Each door panel needs to independently function as an egress or work together as one if they're too narrow. Just keep that in mind depending on where you're placing them!
Good point! These are just closet doors for me, so I think I’ll be fine. I was considering using something like a magnet to keep them closed!
Look into Pivot-French doors! They come with tracks like bifold doors and can be configured in different sizes. Makes it easier to find a solution that fits your needs without going through the hassle of imports!
That looks promising! But I'd prefer to find something from an American manufacturer to avoid high tariffs.

I’m aiming for a total clear width of about 28" and 22", but if needed, I could adjust to 30" and 24". Just want to avoid dead-bolt systems!
