Hey everyone! I've got a ton of fresh strawberries this year and I'm looking for healthy ways to preserve them without drowning them in sugar. We've been making jams, ice creams, and drinks, but we're a little burnt out on the sugary stuff. Are there any methods or products out there that can help me keep these strawberries conserved without the added sweetness, aside from just freezing them?

You should totally consider getting a dehydrator! Strawberries dry out nicely and can last for ages once they're properly done. It's a great way to enjoy them without added sugar!
Dehydrating is definitely a solid option! If you've got a freeze dryer, that could work too, though opinions on them being worth it can vary. If you already have a freeze dryer, go ahead and give it a shot!
I actually have one of those, so I'll definitely try drying some! I didn’t even think about it before.
You might want to try making jam with low-sugar pectin like Pomona's. You can use just 1 1/2 cups of sugar for every four cups of mashed strawberries. It enhances the fruit's flavor while cutting down on sugar. Just remember, if you're using regular pectin, reducing sugar won't work because that's what helps the jam set!

Great idea! Do you usually slice them up, or do you keep them whole when dehydrating?
