I have this unattractive foam insulation around the bottom of my house, and I'm looking for ways to cover it up. Would using brick be a good option, or do you have any other suggestions to make it look better? Please help!

I’ve had the same issue! I've found that using FRP panels might be a solid solution. They’re fiberglass or non-fiberglass options that don’t rot or mold. You can stick them right onto your existing foam board, and they come with trim pieces too. Check out Parkland Plastics; they sell at places like Menards, though the color choices are a bit limited.
It sounds like your insulation's parge coat is failing. I recommend calling a stucco contractor to handle the repairs. You can ask them for options that use diamond lath for a stronger structure. This could really help improve the appearance.
Thanks for the tips! I’m also considering a simpler option. At a big box store, I saw some plastic trim that could work. I'm planning to install it lapped like my bevel siding to match, and paint it the same color. I’ll just prep the foam a bit with a wire brush and then glue the trim pieces on with some polyurethane adhesive.
Just make sure the adhesive you use is strong enough to hold up in the long run!
