I accidentally ordered a super tall bed from Amazon, and now that it's all set up, I'm not keen on taking it down or returning it. Does anyone have suggestions for the best way to cut through the metal legs without disassembling the bed?

You could try using a hacksaw to cut through the metal legs. Just keep in mind that if you haven't done this before, it might be tricky to make a straight cut, especially if you're lying underneath the bed. Take it slow to avoid doing a messy job!
