I just moved into a house where the previous owners made some questionable updates, including installing unfinished wood countertops that resemble butcher blocks. These countertops require constant maintenance with mineral oil to prevent drying and warping. They're full of cracks and dents, making them hard to clean, and as a result, I've stopped cooking as much. What are some manageable solutions to deal with these countertops besides replacing them entirely? I'm also considering that a resin coating might not apply well due to the excess oil, and while cutting acrylic or glass to size is an option, it's quite pricey.

What about coating the entire countertop with polyurethane? A couple of good brush-on coats might create a much easier surface to maintain. I know you mentioned the mineral oil, but if you can prep it right, it could still adhere well!
Epoxy is a possible route, but honestly, replacing the countertops might be the best long-term solution. If you're after something budget-friendly, Ikea has some nice laminate options that could work well for you.
Consider using food-safe polyurethane. It could give you that nice, smooth finish you're looking for without the hassle of constant maintenance.
