I inherited some old satellite dishes on my roof from previous owners, and I want to get rid of them. My main concern is also removing the cords attached to my siding. If I remove the dishes, what's the best way to repair the screw holes left behind? Or is it safer to just cut the cords and leave the dishes as they are?

When my husband took our dishes down, he just filled the holes with wood putty and painted over them. It took about 30 minutes total! Super simple.
You might want to take a closer look to see if you can remove the dish from the mount using just a few tools. This way, you can pull off the dishes and cords without exposing any holes on your roof since the mount will stay in place. Good luck with it!
Honestly, just pull those dishes off and fill the screw holes with some roof caulk. It's a pretty straightforward fix and shouldn't take too long. No big deal!
