I'm trying to figure out the best way to secure a butcher block top to some upper cabinets in my family room since these cabinets don't have a built-in method to attach a countertop. The butcher block is made up of two pieces that are about 18 inches each and one larger piece that is around 80 inches. Should I just use adhesive, or would screws work better? If screws are the way to go, what type should I use? Any advice would be greatly appreciated!

A straightforward way is to screw through the top of the cabinet into the butcher block from inside the cabinet. It's a pretty common solution that ensures a solid hold! Just make sure to use screws that are appropriate for the material of your butcher block.
For securing a butcher block, a silicone adhesive could work well, especially if your pieces are on the lighter side. It provides enough hold but still allows some movement which is handy for expansions and contractions of the wood.
