We've had a tradition of planting zucchini in our garden every year, but it seems like every time we end up with an overwhelming amount. Sometimes we go out of town, and come back to find zucchini that has grown to be two feet long! It takes up a whole planter box that could be used for something else. I'm looking for some creative strategies to convince my wife to skip the zucchini this season. Any ideas?

You know, if you can't change her mind about the zucchini, maybe suggest some alternatives! You could peel and puree those monster zucchinis when they get out of hand. Once drained, it can be frozen in portions for later use. Plus, it makes delicious zucchini bread! I highly recommend the recipe I found online; it’s a perfect way to use up all that excess produce during winter. Trust me, it’s a hit!
Absolutely! We’ve made loads of stuff with our zucchini too, but by the end of summer, even the kids start to go, 'not more zucchini!' Maybe it's just better to grow fewer plants.
