How Do I Cut Strips for an End Grain Cutting Board and Handle Waste?

I'm working on making an end grain cutting board and have a couple of questions about cutting the initial strips before gluing them up. Once I've cut the strips on the table saw, should I glue them together right away or should I try to flatten them first? If flattening is necessary, what's the best way to do it? Also, how do I calculate the waste when making these cuts? Do I need to consider waste again when flipping to the end grain?

I usually glue them up only if the strips fit together snugly. If there's any gap, I run them through my drum sander to make sure they’re perfectly flat before gluing.
