I've noticed that the mortar between the ground and my brick wall is starting to erode. I'm looking for advice on what steps I should take to fix this issue. Is there a specific term for this repair that I can look up for more information?

I’d refer to this as 'parging'. If you're up for it, it's not super hard to do yourself, but make sure to scrape away all the old mortar before applying the new stuff for the best results.
