I just moved into a new build house, and it's super white everywhere! I want to add some character with a backsplash in the kitchen and around the gas fireplace, but my wife and I are still figuring out the style we want. I'm thinking about using peel and stick tiles for this project. How removable are these tiles once they're on? If I decide they aren't working for me, will I be able to swap them out easily, or is the risk of damaging the drywall too high? I wouldn't mind some adhesive leftover, but I really don't want to mess up the walls. Eventually, my plan is to install actual tile or stone once we find the right look.

There's a good chance you might end up pulling off the drywall paper when trying to remove them. I suggest looking into using wallpaper instead! It may be a safer option for your walls.
It depends on what peel and stick tiles you choose, but if you're worried about damage, you could try attaching a sheet of 1/4" plywood to the wall first and stick the tiles to that. This way, if you want to remove them later, you'll just have to patch up the screw holes instead of the whole wall. Just make sure you place the screws in a grid pattern for easy access later! Also, how heavy are the tiles you're looking at?

That’s a solid suggestion, I plan to do that too. I’m still just browsing tile options and wanted to know about the removability before I buy anything.
These tiles are typically meant to be pretty permanent. They go on easily, but once they're stuck, it can be challenging to take them off without causing damage to the paint or drywall. As a little tip, I’m experimenting in my kitchen by using painter’s tape to temporarily put up different tile samples to see how they look before committing to anything.
