I know I need to watch for signs like wrinkles to know when to water, but I'm not sure how often that is. My plants are in my room, around 18 degrees Celsius, and I have them under grow lights for 12 hours a day. Should I be watering them every few weeks or does it take longer, like a few months? Also, does the size of my echeveria, jade plants, or aeonium make a difference in their watering schedules?

It’s all about reading the signs of thirst, like you're already doing. So instead of thinking every few weeks or months, just water when they show signs of needing it!
The size of your pot and the type of succulent can definitely affect watering. I find that checking the weight of the pot helps a ton. When the soil is dry, your pot will feel lighter.
