I've seen some woodworking finishes that create this stunning, almost 3D illusion in the wood, like it's behind a clear glass with a mirror-like gloss. What techniques or finishes do I need to get that glossy, deep look?

The type of wood is key! You’ll want to start by sanding your piece up to 600 grit. After that, you can either just apply wax and polish it or use a finish like Osmo Poly-X followed by a buffing. It really depends on the wood species and the look you’re going for. Check out this example with Osmo finish!
